Melon, Yellow Canary - (French strain) Canary yellow smoothed skin melon that originates from France, but has a fanatical following in Spain. Very aromatic flesh and the finest of the canary types. Great fresh, but also one of the best melons for cooking. Traditionally harvested before fully ripe and then stored by hanging, which also makes this great for the market growers. Ripe when the skin is a uniform, deep yellow.
